(Set on a crispy straw potato and lettuce salad, drizzled with a vibrant rowanberry coulis)

(Brunoise of fresh winter vegetables with traditional stock)

(Supreme of Chicken stuffed with local haggis and napped with a delicious Drambuie liqueur cream sauce)

(Broccoli, Roquefort cheese and caramelised onion tart, set on a confit of sweet red cabbage with a rich pink
